The Sweet Tooth Fairy Bakery in Provo, Utah was quite a find.  Carson read about it on Nie Nie and has been wanting to try it out.  I went down for a visit and off we went to see what “treats” we could indulge in.  After drooling over the choices for at least 20 minutes we decided on cupcakes. I went for “Vanilla”  topped with a cherry, Carson tried  “Peanut Butter Cup” and Grandma  tried “Raspberry Lemonade.”  I brought home “Cake Bites”  (as seen on Rachel Ray) for the boys.  They were all mouth watering wonderful.  The cake was moist and rich and the frosting complemented the cake

January 7th and I’m still working on my New Year’s resolutions! Every year I seem to write the same thing i.e. eat better, exercise harder and lose weight.  So to help me with these goals I signed up for Bootcamp at 5:30 a.m.  Wow am I sore!  Today was an obstacle course of running, jumping, hopping, lifting and those hated stomach exercises.  I thought I was in better shape than I obviously am.  When I work this hard I’m supposed to want to eat better.  Which is true until I see the candy stash at work.  The same fitness friend who gave me the healthy muffin recipe gave me a high fiber, relatively healthy cookie recipe, so I made them. They were so good I wanted to eat more than my alloted two.  I wanted to eat 12.  I guess I can’t have cookies no matter what. But I’ll pass along the recipe anyway.  The rest of mine went in the freezer, they are harder to eat when they are frozen.  Out of sight, out of mind. Whoever came up with that saying was out of their mind. 

Carrot Nut Oatmeal Cookies

Cream Together:  3/4 cup butter and 2/3 cup honey.  Add 2 eggs, and 2 teaspoons vanilla.  Mix well.  Add 1 cup whole wheat flour, 2 teaspoons baking powder, 1/2 teaspoon salt and 3 cups oatmeal.  Mix well.  Mix in 1 large carrot, grated, 1/2 cup walnuts and 1/2 cup coconut.

Drop by teaspoons on a prepared cookie sheet.  Bake at 325 degrees for 12-15 minutes.

100 calories per cookie

I’m not sure if “starving artist” is correct.  Every Art function that we’ve attended has great food. Take the art show that Robert participated in last night for an example.  There was art and food on 7 floors of an office building.  Yummy gourmet food.  Robert’s art was on the 18th floor with all the dessert.   Pumpkin cheesecakes and key lime pie from Les Madeleine’s Bakery were my favorite.  But it was so hard to choose! there were 8 different types of cupcakes, eclairs, lemon meringue tarts, chocolate tarts, sugar cookies, chocolates cookies,tiramisu, cream puffs, strawberry mousse in chocolate cups and raspberry cheesecake.  The other floors had crackers and cheese, vegetables, quiches, turkey, ham, rolls, breads, dips, sushi, pastas, shrimp skewers, onion tarts and the list goes on.  So, while Robert was “working” I was perusing the art and food on all the floors.  One of the “perks”of the job of Artist’s Wife.

Chalk Creek will now hang on the wall of someone’s office.  We see it go with mixed feelings.  I loved seeing it everyday!  But I look forward to Robert’s next painting and where it will take me when I see it.
